I made a combo product but
I don’t understand how I can make a choice between differents burgers or differents fries like the demo :

There are two ways to achieve this:

1. You can create a variable product where each variation is a different burger (like in the main demo)

OR

2. You can list all burger products and let the user chose only one of them.

Price doesn’t update with combo menu + options :

It updates in the cart. On the product page, live update is not possible for combo products. Add the product to the cart, go to the cart page and you’ll see the full breakdown.

Why can’t we choose between
point of sale and free delivery ? it’s not showing

This is not theme related. Most probably your shipping methods are not properly configured in the WooCommerce settings.
