is there any way to edit the “My Account” drop-down menu (showing -> (Vendor dashboard), Dashboard, orders, Downloads, Addresses, Account details, (Become a vendor), Logout)?
F. ex. if I would like to show only Dashboard, Orders and Logout and change the icons that are automatically used.

These are automatically generated by WooCommerce and other plugins. They are actually the same tabs displayed on the “My Account” page for logged in users. You can remove some of the them (e.g. the Downloads tab), but not all of them as that would break the WooCommerce functionality.
The only way to change the icons would be with CSS. I guess in order to preserve the functionality, the only option to hide some of the links would be again with CSS – e.g. visually hide them without really removing them.
Anyways, if you insist to remove the links and you’re sure what you’re doing, here is a good guide on how to achieve it:

thanks for clarifying. The explanation at rudrastyh helped a lot! Removing downloads by leaving its endpoint empty within the settings works out well for me.
