when creating sub menus under shop in full or tablet screen the subs have an arrow to expand them. In mobile the submenus are all expanded. This causes problems for the user if there are a lot of sub menus as they never see the rest of the main menus. Can this behavior be changed so that we see the arrows instead of them expanding.

No, I am afraid this can’t be disabled. The sub-menus will be open if you are on the parent page – e.g. if you have a SHOP page and the categories are sub-pages, the sub-menu for shop will be open if you are on the shop page or some of the sub-pages.
