How do I edit the to show the vendors name?
I also have under the vendors shop banner: Your cart is currently empty.
A return to shop button as well as a list of ALL PRODUCT categories. I do not want these displayed on an individual vendor page. A vendor page should only display that vendors products.

It sounds like your WooCommerce pages are not properly set. Check under WooCommerce > Settings > Advanced if all pages (Account, Cart, Checkout etc.) are properly set to the right page.
Also, check if the Shop page is set properly under WooCommerce > Settings > Products

ParticipantCan anyone assist on how to edit the vendor’s main shop page? I do not see any pages listed under my pages section that allow me to customize the vendors main store page.
My breadcrumbs are wrong. All vendor pages are showing all site wide categories.
I would love the ability to have the sellers description NOT appear in the banner but only under the banner.

The vendor shop page, doesn’t really exist as a page. It’s just an “endpoint” using the main “Shop” page. It can’t be edited and this is not theme related. It’s how the multi-vendor plugins work.
The only change you can do there is to set the default vendor header design. If you’re using the WC Marketpalce plugin, the setting is located under WCMp > Settings > Vendor > Vendor Frontend.
If you need some other customization on that page, you’d probably need to discuss it with the WCMp support team, as it’s not really theme related.

ParticipantI do not think I am asking for too much. I simply want the ability for my vendor page to look like the example in your demo. Shouldn’t this be available for us who have purchased the template? Why does my vendor shop page look different? I am simply using the imported theme demo. My vendor banner looks different from the demo. I there is also the wrong items in the breadcrumbs, and I am getting site wide categories on the vendor shop pages which should not be there.

No, you are not asking too much and that’s why I am trying to explain.
Our demo is based on WC Marketplace, not WC Vendors. It’s a different plugin and while the theme is fully compatible with WC Vendors too there are certain areas and pages that would look and work differently.
If you want a website exactly as in our demo, you’d need to use the WC Marketplace plugin.
